When the fresh and bright flavors of the summer leave the scene and are replaced by the comfort of chocolate, caramel, milk, and tea, you start to cherish fall and worry less about the advent of a frigid winter. Milk flavored components on desserts have been something we've been watching closely, mostly because they often inspire quick trips to our childhood. A lot of restaurants are working with a version of clotted cream (nata), cream, milk, and burrata. EMP, Betony and the Musket Room all have a milky component on their dessert menu though that's not the only thing they share, both the Musket Room and Betony's pastry chefs are alumni of EMP. Dominique Ansel's (exclusive) burrata soft serve ice cream (though a remnant of the summer) works in the same direction as well. And of course, many of us have tried Momofuku Milk Bar's cereal milk ice cream.

What's fascinating to myself (from Istanbul) and Laura (from Mexico), my wife, who is also a chef, is that kaymak (clotted cream) and nata or milk ice cream respectively is a flavor we grew up with and is still the predominant ice cream flavor in our countries. In the absence of vanilla, it's all milk ice cream.

Regardless, our favorite milky dessert comes from Chef Brian at the Musket Room!

They offer a similar dessert called Milk & Honey at the NoMad that is also incredible. If I remember correctly I think they got the dish from EMP after they took it off their menu.

The Dessert Club by ChikaLicious opened up this past year. It is an amazing bake shop and coffee shop. Try the Creme Brûlée Dough'ssant, the Tiramisu Mochi or the Crepe Cake!

My friend Matthew is the pastry sous chef there. Unfortunately that Chikalicious location closed down. I heard they might relocate but take that as a rumor for now.
