Provided by an inside source, the soon to be opened Lilia in Williamsberg, Brooklyn seems to be on a path towards greatness.

If you've ever watched the excitement on Esquire's "Knife Fight"or had the opportunity of cooking over an open flame, you'd know that wood fired preparations are BOSS! Smoke and char, if used properly, is delicious. Flare ups and fireballs, with a standby extinguisher, are entertainment for guest diners. It's all part of the rustic, country, authentic cooking philosophy many progressive chefs, including Chef Missy Robbins, are striving for. Lilia, her new rustic Italian joint, will feature a crank style wood fueled grill. There's no outdoor kitchen. This grill will be dead center on the line along side your standard plancha, French top and convection oven. Bar snacks, starters and mains will be cooked over the coals. Maybe a little grilled bread, chestnut crema and pancetta. Or grilled clams with Calabrian chili and breadcrumbs. While we are on the topic of grilled things, what about the the swordfish with raisins and earthy/sweet sunchokes? In addition, even though they probably aren't grilled, be sure not to overlook the handcrafted pastas including the pappardelle with veal bolo and porcini or ricotta gnocchi with broccoli pesto and pistachio.

Sounds pretty BOSS, right? Too bad Lilia won't be open for another 2-3 weeks, supposedly. But when it's time, I'll be sure to make a trip out there. As you should too. Can't wait. Congrats Missy and team, good luck!

The collaboration between Chris Santos and the Tao group has come up with another very cool restaurant. Celebrating street foods from around the globe, the giant restaurant is as exciting a culinary adventure as it is a stunning visual artistic experience. Chris has a loyal team of chefs in the back of house who make it seem effortless to be that creative. Needless to say, I'm very excited about this restaurant.
